Budget friendly Sausage Penne Casserole Recipe

Lately, I have tried to find recipes that not only use ingredients already in my pantry but are also budget friendly. If you are looking for a low cost, easy to make meal, I would compare this dish to the flavors to my Italian Sausage Tortellini Recipe BUT requiring half the stuff to make!
What you will need:
1 can or jar of Alfredo sauce
1 Can of diced tomatoes ( you could also use a marinara sauce if you have it)
1 small can of Pasta sauce ( not needed if you use the marina)
1 sausage package (any kind or flavor works)
Penne pasta ( Again you can use any pasta)
Shredded Mozzarella Cheese
** Many of these items you can score for $1 or less
If you have Italian links you can chop or remove the casings and cook until browned. I diced my kielbasa up and cooked it since that is what I had.
In a bake pan, add half of the cans to the pan (including your uncooked noodles). Next, sprinkle the shredded cheese. After that layer add the remainder. Top with shredded cheese and place into your oven.
Now, because you are cooking the noodles the baking time does take some time. I baked ours at 365 for 45-50minutes until the penne was done.

Visiting the Natural Bridge State Park, Virginia

If you know us you know we enjoy hiking, exploring and waterfall or Mountain views!! The Natural Bridge State Park had all of these plus so much more!! 
I just want to stop a second before I dig right in and say if you are traveling from Roanoke you can spot a few fun "roadside" creatures like this fabulous dinosaur pictured above. As soon as my son and I saw this (it happened pretty much simultaneously) we both shouted turn around we HAVE to take a picture. It's literally parked in a field across the street from a mini mart but honestly who cares. It was a fun find and photo opt!
When you come to the park we simply purchased our tickets within the Gift shop. Since it was during the pandemic I am not sure if you always do this but it was pretty easy. I did see websites Groupon had ticket specials so check them out if you want to save some money.
If you are not a huge fan or have little kids in tow when exploring let me offer some fun side things to do when hiking a State park:
🌳  Read historical markers. Not only do they have to work on reading but they also get immersed into what each park has to offer. We have done this since my little guy was a toddler and now he runs to find them without prompting.
🌳  Take Panoramic Photos. My son has always showed an interest in photography so I let him take photos. He has his own camera now but likes to use "Mommy's" still. I have to say some of his photos are better than mine. Kids have a unique vantage point and it also encourages creativity.
🌳 We saw several different species of snakes, a few salamanders & loved all the waterfalls. I get some people are not a fan of snakes. They were pretty common at the State Park. We actually lost count. I will say remember we are in their habitat so keep a healthy distance, practice the importance of respecting nature and it's animals.
🌳 Do any hidden Compass Courses⁣ offered. We have yet to really dive into this but I like to mention it to others who enjoy it.
🌳 Explore some of the rich History. This particular State park had a few village set-ups (pictured above). It was so nice to see agriculture and educate our son on the progression of civilizations to where we are now.

Slow Cooker Pork Taco Recipe

As Summer ramps up I like to make as many "Dump & Go" Slow Cooker and Crockpot meals as I can. This Pork taco meal is so easy and delicious, I hope you try it!
What will you need:
1 can of pinto beans
1 can of Broth ( for mine I used Chicken because it is what we had feel free to use any kind you prefer)
1 pork loin ( you could also use Chicken breasts and shred it as well)
1 packet of Ranch Dressing
Taco shells ( this night we used soft shells)
Salsa for toppings (optional)
I add my frozen pork to the Slow Cooker, can of broth and packet of ranch dressing mix. I place it on low for 4-6 hours. Once it is cooked I shredded.
Next we plated and added our favorite toppings. This recipe is so easy to make, you can dress it up or down depending what you have on hand!!

9 Ways to Experience Erie, Pennsylvania

Summer is quickly coming to a close and we are squeezing in as much as we can before it does! One thing on our Summer list was a staycation in Erie, Pennsylvania. Not a large distance form our home, it is located on the southern shore of Lake Erie. it is Pennsylvania's primary access point to the Great Lakes. There are many things to see, experience, taste and enjoy whilst here! 
Let's explore a few:
I was hosted to help facilitate my review. I was not required to write a positive experience. All thoughts, opinions and photos are my own.
1. Splash your Summer away. Enjoy a day at Waldameer Water park. Test out their new six lane Rally RACER water slide or relax in a Cabana. We arrive at the Water park right when they opened at 11am. I suggest grabbing a locker to store your items because they do not allow shoes, phones, sunglasses on any of the slides. Lines do form as time goes by but we did not have to wait long. On our visit we stayed in the waterpark for around four hours.

A side note, that was brought to my attention but nothing we personally experienced. Rides do close due to low staffing so just check their daily updates! 
2. Try your hand at arcade games. Waldameer has a theme park aside form the Water park complete with roller coasters and carnival style games. I would suggest stopping at Guest Service, which is located in the white building next to carousel. You can purchase a "Wally Card" to play games, rides, purchase food etc. The entire park has gone digital ( no cash accepted) to help with cashier lines. It is easy to grab one with cash if you do not want to use your debit or credit cards at guest services.
3. Beach day anyone? "Presque Isle State Park is celebrating its 100-year anniversary.  A new educational exhibit showcasing the history of the park will be on display from May 17, 2021 through August 23, 2021 at the Tom Ridge Environmental Center". Stop off on any of the beaches for the day, explore their light house or just hit the trails. The nature trails here are perfect for roller skating, biking, hiking or even just to walk your furry friends.
4. Pack a lunch and visit some animals. We love venturing to the Zoological park in Erie, Pennsylvania. I have taken my son here since he was little! If you want to see our tips for visiting a Zoo just click here.
5. Take a hike. Following on our exploration of the regions near us, I discovered Asbury Woods. Believe it or not I found this gem on a Facebook post! The Asbury Woods consist of 205 natural acres of fields, forests and streams offer over 5 miles of breathtaking trails that are open to the public during daylight hours. Enjoy my FULL review HERE.
6. Let's get ready to rumble. Lake Erie Speedway seem to have fun events planned every weekend in Summer. We personally have attended quite a few from the Nitro Circus, the Lantern Festival ( pictured above) to their Wine, Brew and Food truck festival!
7. Art we there yet? We had the absolute pleasure of staying at the Sheraton on Bayfront. It is located in the Bayfront district FULL of history, arts, culture, shopping and restaurants. If you are looking for a great place to rest your feet, to host an event or just to getaway I high recommend a stay here. The convention Center is located right next door. Just walk outside and you can find a number a fun themed cruises including a Pirate Cruise!

8. Sip, Sip, Hooray! Did I mention Erie is right next to Northeast housing the largest contiguous, farm to farm of vineyards, east of the Rockies? I had the pleasure of taking an adult weekend with my fellow writers exploring the areas local wineries. Read all about it here if you are into that sort of thing!

Fun things to do in Western New York

My family and I enjoyed opening night of the Gerry Rodeo. This is a long standing tradition in my family. I have pictures going to this rodeo ever since I was a baby. I remember eating the rodeo dinner with my relatives that are no longer with us. Now we pass the tradition down to the next generation by taking them.
I started to think how many people actually know about many of the fun places we visit? Why not share some fun activities in Western New York? 
Here are some great suggestions and our experiences:

Rainy day Project Thanks to Horizon Group USA, Just My Style Tie Dye Kit

6 Ingredient Zucchini Bread no knead Recipe

My Summer garden is well on it's way! Happy to report that since past years it has lacked. I hope to have several Zucchini so I am whipping up batches of bread. Some to eat, gift to others and or freeze! Enjoy this easy to make recipe.
What will you need:
4-5 Cups Bread Flour
1 tsp. Salt
1 packet of Active Yeast
1 3/4 Cup WARM ( not hot) water
1/2 cup Sugar
1-2 Zucchini Shredded
Mix ingredients into a bowl, together! The dough should be a tad sticky. Cover with plastic wrap and a towel. Let sit until doubled in size. Once it has doubled in size lay flour on your counter and roll the dough with flour until it is not tacky.
Place in a oven pan covered at 450 degrees for 15 minutes. 
Uncover and bake for another 20 minutes until golden brown.
