Pumpkin Soup Recipe
What you will need:
1 Pumpkin ( These hold a lot of liquid, just check it doesn't have any holes)
1 onion or leeks, sliced
3 garlic cloves
Rosemary ( I used one fresh stem as pictured)
2 celery stalks, diced
Chicken or Beef Broth (quantity depends on your pumpkin)
Spoon & knife!!
Cut top of Pumpkin and scoop out the seeds.
Add your Vegetables & herbs
Pour broth inside the pumpkin.
I added some salt & pepper and replaced the top.
Place into oven at 300 degrees for about 2 hours.
Keep an eye so the pumpkin doesn't over cook and spring a leak!
Once it has cooked gently remove from oven.
Scoup out soup & the cook pumpkin insides.
Serve & Enjoy!

ReplyDeleteHoly crap- and your pumpkin doesn't get mushy in the oven?? Very interesting! My inlaws have a mini pumpkin patch and harvest anywhere between 100-200 pumpkins every year. Surely they can spare one!
