Spinach & Tomato Rotini Recipe

~Spinach Tomato Rotini~
What you will need: 
1 box of Rotini ( I used the tri-color)
2 cloves of minced garlic
1 cup chopped fresh spinach
1 can of diced tomatoes
Salt & pepper to taste
1 small diced onion
2 tablespoons all-purpose flour
1 1/2 cups half-and-half
1/2 cup grated Parmesan cheese
While boiling your Rotini, Place the minced garlic & onions into a skillet over medium heat until fragrant. Be careful not to burn them!
Then add the petite diced tomatoes, the spinach,  salt & pepper to the skillet and cook over medium high heat until bubbling.
In a separate bowl whisk together the half and half and the flour.
Add the half and half/flour mixture to the skillet, along with the Parmesan cheese.  Stir while cooking until everything is heated through and thickening.  Stir in the drained Rotini.
Serve and enjoy!

  1. This looks really yummy. You could easily add some diced chicken for extra protein and have an all in one meal. Thanks for sharing!

  3. This sounds so good! I noticed that the recipe calls for parm. cheese, but you have a Mexican blend in the photo. Can you just use whatever cheese you have on hand? Thanks!
